April 11 is Cheese Fondue Day which is really the perfect excuse to gather your favorite people around one bubbling pot of warm, silky cheese and call it a celebration. There are few foods as instantly comforting as cheese fondue: it is rich, stretchy, fragrant, and made for sharing.
One bite of toasted bread dipped into melted cheese, and the whole thing feels less like dinner and more like an event.
What is cheese fondue
Cheese fondue is a classic Swiss dish made by melting cheese with white wine in a heavy pot called a caquelon. Traditional versions often use cheeses such as Gruyère, Emmentaler, or Vacherin, and the mixture may also include garlic, a little starch for smoothness, and seasonings like nutmeg or kirsch. It is usually served communally, with people dipping bite-sized pieces of food into the pot.

A short, delicious history of cheese fondue
Fondue is closely associated with Switzerland today, and rightly so.
The earliest known recipe for the modern form of cheese fondue dates back to 1699, in a book published in Zürich. That recipe described cooking cheese with wine and dipping bread into it- already recognizably close to the fondue people enjoy today.
Later, in the 1930s, fondue was heavily promoted across Switzerland by the Swiss Cheese Union, which helped transform it from a regional specialty into a widely embraced national dish. That campaign played a major role in cementing fondue’s image as cozy, sociable, and deeply Swiss.

Host a fondue night at home: Set out bread cubes, vegetables, potatoes, fruit, and a few surprise dippers. A bubbling pot in the center of the table does most of the work for you.
